This apple crumble is made with our ANZAC mix and it is SO delicious and quick to make. You can do one big crumble in a baking dish or individual crumbles in small ramekins. The combination of almond flake and coconut flake means the tastiest crumble with perfect crisp texture on top. We like the stewed apple with minimal sweetness to really bring out the contrast between the fruit and the topping – if you prefer, you can leave out the sugar completely – it’s going to be super yummy either way. We love this served with vanilla icecream. If we’re talking low investment high return dessert, this has to be up there with the best of them. Enjoy!!

Ingredients

8 granny smith apples, washed, peeled and diced

1 tbsp caster sugar

1 cup water

2 cloves

1 cinnamon stick

180g of ANZAC biscuit mix (1/2 a pouch)

60g of butter or dairy free spread
For the stewed apple:
For the crumble:
Directions
Place fruit, sugar, water and spices into a heavy-based saucepan.
Place on medium heat, stirring occasionally.
Simmer gently until fruit is cooked and about half of the liquid has evaporated. Fruit should be soft, but still hold some shape.
Spoon the fruit into four oven-safe ramekins or one shallow oven-safe dish for a big crumble.
Measure ANZAC mix into a bowl and add cold dairy-free spread or butter.
Rub the spread/butter into the mix with your finger tips.
Loosely scatter crumble over the stewed fruit.
Bake at 180 degrees celsius for 15-20 min. Crumble should be golden on top. YUM!
