These salted caramel peanut butter choc chip cookies are ridiculously delicious. They're made with our ANZAC biscuit mix so they have the goodness of almond AND peanut. Gluten free, vegan and super satisfying - everyone is going to want to get in on these.
Ingredients
-
1/4 cup (63g) melted butter or dairy free spread
-
1/4 cup (63g) smooth peanut butter
-
2 x 20ml tbsp (51g) maple syrup
-
3 x 20ml tbsp (60g) water
-
1 x YOMO ANZAC mix
-
1/2 cup (80g) roasted, salted peanuts
-
~1/2 cup dark choc chips
Directions
Preheat oven to 170 degrees C.
Put all the wet ingredients into a large bowl and whisk together.
Add the ANZAC mix and choc chips and combine well with a spoon, spatula or your hands.
Place tablespoonfuls of mixture onto a lined baking tray and flatten slighlty, leaving ~7cm between each biscuit.
Bake for 9-12 min or until golden around the edges.
The biscuits will be soft when they come out of the oven so please allow 10 min for them to cool and set before eating. Yum!!
