Ingredients
-
YOMO basic gluten free bread mix
-
170g sorghum flour
-
30g olive oil
-
350g water
-
Extra sorghum flour for dusting bench and rolling pin.
Directions
Place all ingredients in a large bowl or stand mixer.
Mix very well either by kneading the dough with your hands or using the mixer at medium speed.
Divide into 12 dough balls.
Lightly flour your bench or rolling surface.
Rub some flour onto your rolling pin.
Roll out the dough balls one at a time, ensuring that you flip the flat bread regularly as you roll - this ensures that it won’t get stuck to the bench. Re-flour the bench and rolling pin regularly as required.
Once you have rolled out a flat bread, get the cooking process started.
Heat your pan until it is quite hot and grease with oil.
Add your first flat bread to the pan and cook on one side before flipping and cooking on the other. This will take ~3min on each side.
Repeat the process of rolling and cooking. Pile them onto a plate as they’ll keep each other a little bit warm as you continue cooking.
If you want a softer gluten free wrap, use minimal oil in your pan - just enough to ensure no sticking. If you want a crispier flat bread, use a bit more oil.
