These gluten free thumbprint cookies are so delicious and cute and VERY quick to make – we’re talking mix to mouth in 20 minutes! Everyone will love these gluten free thumbprint cookies and you can make them pretty colours by changing up the jam filling. Our YOMO gluten free Shortbread mix is super versatile – Shortbread doesn’t need raising agent so you just need to remember to add the ¼ tsp of bicarb soda. We used Bonne Maman Apricot jam and a homemade raspberry rhubarb jam made with organic coconut sugar, which is probably my favourite jam flavour of all time. Ingredients

1 x YOMO gluten free Shortbread mix

100g melted butter or dairy free spread

1/4 tsp baking soda

2 tsp vanilla essence

Jam for filling
Directions
Line a baking tray and preheat oven to 170 degrees C.
Melt butter or dairy-free spread.
Mix with shortbread mix, baking soda and vanilla.
Roll teaspoonfuls of dough and space out on the tray.
Plant a little finger in each one and fill the hole with jam!
Bake for ~15min or until lightly brown - YUM!!
