These delicious sweet potato rolls made with our Burger Bun mix are slightly chewy, super filling and full of wholefood goodness!! These gluten free bread rolls are a bit denser than the usual light and fluffy low carb burger bun rolls and are perfect for those who want a bit of carb in their bread but still want a gluten free bread that is soft and full of flavour. I love these rolls to keep in the freezer, toasted for lunch or breakfast. The kids love these toasted with avocado for breakfast or lunch. Keep your gluten free sweet potato rolls in the fridge in an airtight container or in the freezer so that you have bread on the ready whenever you need it.

Ingredients

1 x YOMO Burger bun mix

170g potato starch or corn starch

240g mashed or puréed sweet potato

350g water
-
+ optional free range egg
Directions
Preheat your oven to 180 degrees Celsius.
Combine all ingredients in a large bowl or the bowl of a stand mixer.
Mix thoroughly, scraping the sides of the bowl down a few times throughout the process.
Let the dough sit for a minute and line a baking tray with baking paper.
Roll 8 balls of dough and flatten them onto the baking tray, spacing them out with ~7cm between. You may wish to wet your hands lightly with water to stop the dough from sticking to them.
Bake your buns for 1 hour and allow to cool completely before cutting and enjoying.
These buns keep well in the fridge in an airtight container and also freeze beautifully.
