Sticky Date Banana Bread

This combines the decadence of sticky date pudding with the goodness of banana bread. You can feel great about eating it any time of day, not just for dessert. We love it spread with almond butter caramel.

Ingredients

300g pitted dates, roughly chopped

1 tsp baking soda

1½ cup (375g) water

1 x YOMO gluten free Banana Bread Mix

½ cup (115g) light olive oil or melted coconut oil

2/3 cup (190g) mashed banana

+ Optional egg
Directions
Combine the dates, baking soda and boiling water in a large heat proof bowl and leave for at least 30mins.
Preheat oven to 170 degrees and grease and line a loaf tin.
Add the mashed banana, olive oil and Banana Bread mix to the date mixture. At this point you could also add an egg if you like.
Mix really well and transfer into the loaf tin.
Bake for ~50min and test with a skewer.
Cool on a wire rack and enjoy!
