If Snickers and Twix had a baby then this is it - only gluten free, no additives or preservatives and no gums. With the option to keep it vegan. These delicious gluten free treats are super easy to make and loved by EVERYONE. They are filling too and make a great dessert, snack or accompaniment for your coffee or tea. Our YOMO gluten free Shortbread mix makes the crunchy base so easy to make!!

Ingredients

1 x YOMO Shortbread mix

100g melted coconut oil (*or butter or dairy-free spread, see texture notes below)

250g peanut butter

1 cup roasted salted peanuts

3 x 20ml tbsp maple syrup

2 x 5ml tsp vanilla essence

Pinch salt

200g dark chocolate
-
10g coconut oil (use purified for no coconut flavour)
Shortbread base
Peanut Caramel
Chocolate top
Directions
Preheat oven to 160 degrees C and line a 20cm square tin.
Mix Shortbread base ingredients well and transfer to the baking tin.
Bake for ~20 min.
Allow to cool.
Mix peanut caramel ingredients well in a bowl.
Spread over cooled shortbread base.
Transfer to the fridge to cool.
Melt chocolate and coconut oil.
Pour over the peanut caramel and then set it in the fridge or the freezer if you’re impatient. Sprinkle with flaky sea salt after it’s partially set - optional but encouraged!
*Shortbread base texture notes: Mixture will be less runny with melted butter or dairy-free spread instead of coconut oil. Coconut oil gives a harder, richer, melt-in-your mouth base, a base made with dairy-free spread is a bit softer, butter is somewhere in between. All good options!!
