Low carb apple pie Hot Cross Buns

These gluten free, low carb Apple Pie Hot Cross Buns are delicious and super quick to make. No rise time is needed because they are made with our YOMO Burger Bun mix – just mix, shape and bake. You can add 30g finely chopped dried apple for a stronger apple taste if you can afford an additional 1.5g carbs. These buns are light and soft and can be enjoyed fresh or toasted.
Ingredients

1 x YOMO Burger Bun mix

3 x 5ml tsp cinnamon (6g)

Grate of nutmeg

110g pure apple sauce

2 x 20ml tbsp (40g) no added sugar golden malt syrup OR 2 x 20ml tbsp (51g) maple syrup

50g chopped pecan nuts

1 egg
-
200ml water

*Optional - add 30g finely chopped dried apple

3 x 20ml tbsp (69g) almond butter

1 x 5ml tbsp (2g) tapioca starch

1 - 1.5 x 20ml tbsp (20-30g) water
For the buns:

Directions
Preheat oven to 180 degrees Celsius.
Mix all the ingredients well using a stand mixer or your hands.
Shape dough into 12 round balls.
Flatten balls onto a lined baking tray leaving at least 1cm between each bun.
Place in the oven and set a timer for 45min.
While the buns are baking, mix cross ingredients in a small bowl.
Add a little bit of extra water if the mixture is too thick to pipe.
Remove buns from the oven at 45min and pipe on the crosses.
Put buns back in the oven for another 10 minutes.
Remove buns from the oven.
Let cool for at least 10 min and then enjoy!!
