If you are looking for a soft wholefood, no added sugar roll that feels a bit like a brioche bun, you will love the pumpkin buns. The are made with our Burger Bun mix with some added mashed pumpkin and starch. Everyone at our house loves them. They are awesome for burgers and also for the lunchbox because they stay soft. This is a great gluten free bread with no yeast, no rise time, no additives and pure ingredients. They also freeze beautifully!

Ingredients

1 x YOMO Burger Bun mix

1 cup (230g) mashed pumpkin

1 cup (180g) potato starch

350g water

+ optional free range egg
Directions
Pre-heat oven to 180˚C and line a baking tray with baking paper.
Combine baking mix with all other ingredients in a large mixing bowl and mix very well with your hands, or a stand mixer.
Let the dough sit for a few minutes, then divide into six portions.
Form each portion into a ball, place on the baking tray and flatten to approx 1.5cm thick.
Bake for 55-60min.
Place the tray on a wire rack - the buns will be a bit soft in the middle so please allow them to cool completely before enjoying!
