For me, a brownie is an every day kind of treat but these ones are next level. More like a weekend brownie, or a dinner-date-dessert brownie or holiday brownie. They are rich and fudgy, with a delicate crust on top. These are going to lift your gluten free baking game from excellent to truly superior. Also, through the power of good ingredients and no additives, they still manage to make you feel good. They’re not sickly sweet, they’re on point. OK you get the idea I’m in love and I think you will love them too!! Now get baking!

Ingredients

1 x Choc Chip mix

2 x 20ml tbsp (18g) cocoa or cacao

½ cup (125g) almond butter

¼ cup (57g) light olive oil

½ cup (125g) very hot water

~85g of dark chocolate chunks (we used our organic 70% chunks)

~70g pecans
-
½ cup chopped walnuts

1 x 20ml tbsp coconut sugar

1 x 20ml tbsp maple syrup
Crunchy crumble topping
Directions
Preheat the oven to 180 degrees C
Grease and line square baking tin (20cm x 20cm)
Combine the choc chip mix, olive oil, hot water, almond butter and cocoa in a large bowl and mix very well
Stir in the pecans and chocolate chunks
Transfer into your lined tin and smooth it out
Combine your topping ingredients in a small bowl and mix well
Sprinkle over your brownie and then push into the top with the back of your spatula
Bake in the oven for 20-25min until the nut mixture on top is golden and delicious
Cool, cut and enjoy!!
