Easy gluten free bread in a bread maker

This is our basic white bread recipe using the YOMO basic gluten free bread mix in your bread maker! A bread maker makes gluten free baking so easy and delivers a very soft loaf with a nice even crumb. Make sure you allow your gluten free bread adequate time to cool or in will be too soft to cut! The texture of this bread is like sourdough - the corn starch delivers a slightly lighter gluten free loaf while using potato starch will give a denser chewier loaf. Both are great!
A weigh scale is essential when making gluten free bread. Gluten free baking requires precision to ensure you get a good rise and the right amount of moisture.
Your gluten free bread will be very soft on the first day and there's a good chance you'll eat it all. If you don't, you can slice and freeze so that you've got gluten free toast on hand in the freezer whenever you need breakfast or a sandwich. Because our gluten free bread mix is completely free from additives, the loaf will become firmer after the first day. You can soften it by lightly toasting or you can turn it into a lovely crunchy toast.
I have always preferred baking my gluten free bread in the oven rather than a bread maker. But I had a lot of requests and questions regarding the bread maker! I bought a cheap one at kmart to try it out and I have to say I was impressed. This is an extremely convenient way to make gluten free bread. I'm not saying that all my gluten free baking is going to be done in a bread maker, but it's definitely a good option to have on hand and I think pretty soon my daughters will be able to make their own gluten free bread using this method!

290g YOMO bread mix (either single pouch or weighed from bulk)

170g of corn starch OR 170g of potato starch

6g of dry yeast

400g water (room temp)

Making your loaf in the bread maker
Take the tin out of the bread mixer and ensure the paddle is in place.
Place the tin on your scale and zero the scale.
Weigh the water into the scale.
Add the bread mix and potato 0R corn starch.
Sprinkle the dry yeast on top.
Ensure that you have the bread maker on the gluten free setting.
Choose the darkness of the crust - if you’re not sure go with medium.
Close the lid and hit the start button!
You may wish to gently scrape down the sides of the tin with a spatual around the 10 minute mark if it doesn’t look like all the flour is being adequately pulled in.
Use a spoon or spatula to mix the ingredients - when they start to come together, get your hands in there and start kneading.
Optional: You can brush the top of the loaf with olive oil or butter 5-10 minutes before the loaf is cooked.
Once the bread maker has finished, remove the tin with an oven mitt and tip the gluten free loaf on to a wire rack to cool.
Allow to cool completely before cutting and enjoy!!
