Chocolate Fudge Self-saucing Pudding

If you’ve got a craving for delicious fudgy comforting pudding, you are in the right place! This recipe is inspired by a recipe from Bistro, by Philip Johnson that I used to make in my pre-gluten-free life. This one is just as rich, gooey, comforting and delicious as I remember the original to be.

Ingredients

YOMO gluten free Choc Muffin Mix

1/3 cup (76g) light olive oil or sunflower oil

2/3 cup (167g) water

1 x 20ml tbsp (20g) white or apple cider vinegar

50g roughly chopped dark chocolate or chocolate chips

1 x 5ml tsp (5g) vanilla essence (optional but encouraged)

2 x 20ml tbsp (18g) cocoa powder

140g brown sugar

300ml hot water (ideally previously boiled)
For the Pudding:

Directions
Preheat oven to 180 degrees.
Grease a pudding basin with oil, butter or spread.
Chop the chocolate and add all the pudding ingredients to a bowl.
Mix well and scrape into the pudding basin.
In a separate heat proof container, mix the sauce ingredients well to dissolve the sugar.
Pour the sauce gently over the pudding mixture in the basin.
Bake for ~45 min.
Eat straight away with ice cream or cream.
