This is an adaptation of a classic from the Women’s Weekly Cakes & Slices recipe book. Tastes like the 90s, in a good way. The apple adds natural sweetness and moisture – you don’t really know it’s there but the texture is superior. You can ice it with our No Fuss Glossy Chocolate Icing or it’s also delicious plain, with sifted icing sugar or with whipped cream.

Ingredients

2 eggs

1 tsp vanilla

2 grated green apples (~220g grated apple)

1/2 cup (115g) light olive oil

1/4 cup (63g) water

1 x YOMO Choc Muffin mix
Directions
Preheat oven to 180 degrees C and grease and line a round baking tin.
Whisk eggs and vanilla in a bowl.
Add grated apple, light olive oil and water.
Mix in the YOMO choc muffin mix.
Transfer batter to prepared tin and smooth it out on top.
Bake at 180 degrees C for ~40 min and test with a skewer.
Allow to cool completely before cutting and/or icing.
