These gluten free, dairy free muffins are DELICIOUS. You can keep it vegan or use egg – the choice is yours. These choc chip banana muffins are soft and sweet but not too sweet – so you can have them any time of day! The vegan version of these gluten free muffins without egg is slightly moister with a slightly bigger crumb whereas the egg version is a bit lighter with a smaller crumb. I love them either way. You only need half of each gluten free baking mix for this gluten free recipe but if you want to be super efficient you can make a double batch and freeze some.

Ingredients

1/2 pouch (175g) Choc Chip mix

1/2 pouch (185g) Banana Bread mix

~2 bananas (240g) mashed banana

1/2 cup (115g) light olive oil or melted coconut oil

1/4 cup (62.5g) water

1 tsp white or apple cider vinegar

1 egg
Directions
Preheat oven to 180 degrees C.
Fill a 12-hole muffin tray with paper liners.
Mash your bananas and mix in the olive oil or melted coconut oil, water and either vinegar OR egg.
Weigh your dry mix ingredients into the bowl and mix thoroughly.
Divide your batter into the 12 muffin pans.
Bake for ~25 min.
Allow to cool and enjoy!
