These chewy apricot bars are so good for the gluten free lunchbox!! Made with our ANZAC mix so that they are super quick and easy to make. These little bars of gluten free goodness give good energy while being nourishing at the same time. We all know apricot and almond are best friends and then you add sesame and it’s a party. If you’re not into sesame, pumpkin seed would also be delicious.
These little bars will take your gluten free baking next level and are so quick to make and ultra convenient for cutting, storing and plonking in the gluten free lunch box. My children love them and I love them as a little morning or afternoon treat.
Ingredients

1/4 cup (63g) melted coconut oil

1 x 20ml tbsp (26g) honey or for vegan use golden syrup, maple syrup or agave

1/4 cup (63g) water

1 x YOMO ANZAC mix

A couple of handfuls chopped dried apricots

Sesame seeds to taste (we did ~ a 20ml tbsp)
Directions
Preheat your oven to 180 degrees Celsius.
Grease and line a 20cm square tin.
Mix the wet ingredients and add the ANZAC mix.
Combine thoroughly and work in the chopped apricot and sesame seeds.
Transfer to prepared tin and flatten it out on top.
Bake for ~25min and then allow to cool before removing from the tin and cutting.
